how long is it really necessary to pressure cook?

i have read some guides that advise cooking your [rye] jars at 15 PSI for an hour, 90 minutes, even two hours.  to me, this seems ridiculous.  after soaking your grains for 24 hours or so, most all of the heat-resistant endospores have long since opened up, and 30-45 minutes is all that is necessary to ensure total pasteurization and sterility inside the jars, especially if you let the jars sit in the closed-up pressure cooker until it cools down a little.

i have had no problems with pressure cooking, or even simple double-boiling for 45 minutes.

what has your experience been with this?

I do about 75 min s or 90 mins just depends on my mood never a problem just depends on me but 60 should be plenty they all say 90 min for grains just try and what ever works for you

I do 100 mins minutes for quart jars. 120 usually.

45 minutes at 15psi for brf pf tek half pints...no contams since I started using a pressure cooker

Phortre55 and Doc said it all,if rye berries didn't need to be PC'd that long then don't you think we would be doing 45 minutes

The 'standard' for sterilization is 20 minutes at 121C, which is pretty close to 15 psi.

Now, that means that a kernel of rye in the center of the jar needs to be at 121C for 20 minutes.  Since only the exterior of the jar is exposed to the steam, heat must travel through the glass, which is an insulator, and then through each kernel of grain by conduction.  This takes a lot of time.

well, that's what i'm talking about.

once the thing gets up to heat, don't you think 45 minutes is more than enough to heat it all the way through for that long?
