Popcorn soak and simmer
    #1442096 - 04/09/03 08:48 AM (13 years, 7 months ago)

SWIM's popcorn has been soaking for 12 hours (it says 24 in the popcorn grain tek). He is ready to load up the jars. Should he just simmer at a lower heat for longer? The kernals still seem pretty hard, like he can't crush them when squeezed really hard.

this was posted by Hippie3 over in the adv. cult.
Quote:

recently discovered that one can skip all that soak/boil crap and just place popcorn directly in pc, cover with several inches of water and pc it at 15 psi for 60 minutes, by which time the popcorn is fully hydrated and much tenderer than the other methods, then just drain it well and load into jars then back to the pc to sterilize it another 60 minutes at 15 psi.
so only 2 hours to make popcorn jars instead of two days.
don't worry about bursting popcorn open, either, works better really if it is burst open.

It has now been 36 hours of soaking. The kernels are still relatively hard.

He wanted to do the PC jobby a la Hippie3 but wasn't sure of how long to put them in there for (they absorbed some water). He was thinking just like 15 mins or something?

You would be best off simmering the corn now, leaving it to drain for an hour and then sterlising it in the pressure cooker.

I just wanted to add to the post about pcing the popcorn. make sure their is about double the amount of water than popcorn or you will start burning the kernals. I used this and my jars are doing just fine.
