Any agar can become infected with bacteria. If the agar becomes contaminated with bacteria, it often works to flood the agar with peroxide straight from the bottle and swish it around for a few seconds and drain. Two quick rinses with peroxide will wash most bacteria away. This does not work if the contam is a mold.
I don't think the recipe would work well for shrooms because of the salt in beef bullion. Shrooms will grow on beef broth but bacteria do even better. Gelatine is not good because it is liquid at room temp unless you make it extra thick and many things that grow on gelatine can digest it and turn it to liquid in a hurry. Agar is good because it stays solid and almost nothing can digest it.
Anno's dog food agar is good for shrooms and malt extract agar is also good.
You can take just about anything (a little dog food, corn meal, BRF, V-8 juice, green beans, lima beans, molasses) cook them up, pour off the liquid, add agar and pressure cook the mixture to make an agar that is just as good as any agar you can buy. Agars with a lot of sugar discourage the growth of bacteria. You can add 4% Karo corn syrup to an agar recipe if it lacks sugar to make it more selective.
