Can water touch jars whatsoever in pc?

Now I know this has been asked before here: http://www.shroomery.org/forums/showflat.php/Number/10054196#10054196

but there are mixed answers.  I will be using 1/2 pint jars and my pressure cooker is 16 quarts and the brand is "Presto." The jar rack that came with the PC is not very tall at all and 1 inch of water would definitely touch the jars.

I can put the jar lids on the bottom but then they would not be on the tops of the jars. Is it ok to leave the ring lid off of the jars and just put tin foil on top of the flat metal tops of the jars? (note the flat metal lid goes on the jars and then the ring screws onto the top above the flat metal lid.) 

So 2 questions here. 1. Can water touch the jars in the PC? 2. If not, will it be fine to put the lid rings on the bottom and just use tin foil on top of the flat metal lid? Thanks.

The reason I ask is because I'm a little paranoid about the water boiling away during the pc'ing process.

water touching the jars is fine, just so long as they don't float. You don't HAVE to have the rings on a pf tek jar, but  fill my pc up until the water is about 3/4 of the way up the jar. Doesn't hurt anything

water can touch the jars, but make sure the jars warm with the water so the quick temp change doesn't crack them.

warm the jars on low heat before you put the PC lid on and crank it up to get it to 15psi when ready, then drop the heat to as much as is needed to keep the pressure up.


keep 3 lid rings in the bottom with a folded up piece of aluminum as a rack. make sure the jars aren't too close to the bottom because it'll burn your substrate potentially

Cool. Thanks for the prompt replies. So I CAN indeed use the lid rings on top of the rack.

Will I need to put tin foil on top of the flat metal lids or will the flat metal lid be sufficient enough? I would figure using tin foil would lesson the chance of water getting inside of the jars. Thanks again.

you should have a platform to rest the jars on basically. you also should have aluminum lids on the jars in addition to lids so water content in jar isn't messed up during PC

a little bit is ok. but the point is they can be lifted completely out of the water.

which is what you should aim for

nah, just use balls of tin foil and rest the rack on top of them....You want to keep the jars out of the water.....but for decades before the current age people partially submerged them in water.  I have too on accident and it worked out....

What i do is put a towel on the bottom of the pc, load the jars in, fill water 1/3 up the side of the jars, pc for 90 mins at 15psi.


works well.

Put a pie pan in the bottom of pc and set rack on top of that. its what i do..no problems. Lets me fill up to minimum line without jars being in the water.

A little bit of water touching the jars is not bad.  The AA instructions say to put 1" of water in the cooker, which would go well above the level of the included trivet.

It's important to raise the jars off the bottom of the cooker to prevent the direct transfer of heat from the bottom of the cooker straight to the jars.  This can cause the insides to heat unevenly and the bottom of the jars to cook/caramelize.

The pie pan on the bottom sounds like the easiest route. If I choose to put a pie pan underneath the jar rack, should I put it with the bottom facing up or down? I would assume the bottom should be facing UP so that the water can float freely without the bottom of the pc heating the bottom of the pie pan.

Bottom facing up.  Drill a few holes in it so that boiled water can escape without moving the jars too much, otherwise it will want to make the jars jump and shake or even fall over.

I use a small PC that only holds 3 quart jars and I have to submerse them 1/2 way under water to prevent all the water from boiling out; and it works fine. Just make sure that the water level is under your tin foil drip shields (and that they are on tight) and you should be OK.
