What if the pressure cooker runs out of water

THis is the first time I've used a pressure cooker now that I've decided to try and step up my game! Once of the things I always had to worry about boiling jars was not noticing when I'd boiled of all the water.
Now I've got a 23qt PC with a gauge and a regulator (probably standard on all PC's. The directions say put in 12 cups (3 quarts) of water. What I'm wondering is - Lets say I leave it unattended and the water all boils off. Wouldn't the pressure also quickly drop?
Just curious. Any responses are appreciated.

It will likley overheat and crack jars/ melt bags.

Thanks for the responce. I know that from baking my jars using the PF Tek. I'm wondering if when all the water in a PC boils off the pressure drops.

12 cups? wow thats allot, I just put an inch or two, just to where it covers the bottom spacer for the jars to sit on. You turn it on and leave it on high to med high until you hear the first rattle of the weight, reduce the heat until it starts to shake intermittently every 30 seconds or so, turn off 90 minutes after the first rattle. You shouldnt run out of water if you fill the bottom, don't cook it to violently(hot), and don't forget and leave it on. Set the alarm on your cell phone when you hear the first rattle and turn it down.

If you boil it dry it can overheat, ruin your PC(warp bottom), explode, or make a seal or safety valve fail and make a steam geyser too.

If your pressure cooker runs out of water than it will not be able to create pressure. Water expands by a factor of about 1600 when it boils, air alone cannot create pressure without a perfect seal. Without the increased pressure the boiling point of water lowers to 212 degrees, the drop in pressure would cause the water to boil out of your jars, as they would be at a temperature of a out 250. Also it's definitely true that the jars would crack and that your pc could be destroyed like 3n1gm said.

Depends on weather you forget to turn it off or forget to turn it down. Forget to turn it off it boils dry and ruins PC, forget to turn it down and

I learned my lesson after baking some substrate using the PF Tek. Now I set my cell phone alarm for ever 30 minutes and add 4 cups. But I can't do that with a PC. My PC locks once the pressure starts to build. What I'm curious about is if after running out of water the pressure would drop since nothing is producing any steam. It seems logical but I don't know.

No the pressure will not instantaneously drop. If you follow the manufactures instructions on how much water to add the PC will be fine for the allotted time (60-90 min).

THanks. It just survived a 60 minute session with some Rye Grass Seed. I'm no longer concerned re: 90 minutes.
It's a whole new world for me now!! I love all you guys/gals. I'm kinda drunk too which makes me love you even longer time! But seriously thanks for the responses, I hope someone with similar hesitations finds this thread.
