if you pick it up with your dry hand and a lot of it sticks to your skin, it is not dry enough.

Yeah, what they said. If you're impatient just spread it out on a cookie sheet with paper towels on it after the simmer. Spread it out, it will steam dry faster and the paper towels will soak up excess moisture.

that's what I do, but don't use paper towels... such a waste. just use a clean dry towel. they can absorb moisture and you can reuse them. also, a fan will help speed up the process too.

About half the time I put it in a strainer for 5 min and start filling up jars. Itll be soaking wet abs I just kinda shake some water off as I fill the jars by hand. Other times I let it dry for 12 hours. Out of last 60 jars, 0 contams, I notice no difference in growth speed. This is with wbs. So I wouldn't sweat it to much

I always lay them out on cookie sheet pans with a fan pointed over the tops of the pans for a few hours. Until it doesn't stick to your hand, it's too wet.
Wet grains, even after being PC'd, will slow mycelial growth. If there's water visible in your jars during colonization the mycelium will have to fight it to some extent and it also gives bacteria a chance.

If your WBS is too sticky, it's most likely because you boil/simmered for too long. How long did you boil/simmer for and do you know at what temps.?
WBS is tricky to get the hang of the boil/simmer step down at firstt because, due to the size of grain, it's really easy to over boil/simmer. I boil my WBS for 10 minutes, no longer. Set a timer if you have to. If you boil WBS for any longer then ten minutes, grains start to burst and puke starches.

Not only that but some brands of WBS are worse than others when it comes to cracked corn, and corn is super starchy and when soaked/boiled, turns into blobs of sticky residue. Mycelium sure loves it, but you must rinse the crap out of any batches you boil afterwards to prevent this mess from coating everything (including the inside of your jars).
