Heifer.org is an excellent charity BUT! Its important to pick an animal that eats a kind of food that humans don't eat.
So don't donate chickens! Chickens eat grain, grain that could be eaten by people. If you feed an animal to raise it, the ratio is approximately 10 food calories form their staple forms 1 calorie of meat. With chickens the margin is probably narrower cause they lay a lot of eggs, but still the net result is that because of your chickens, there are less humanly edible food calories in your third world country than there are with no chickens. Something that eats hay/straw/grazes is excellent cause that turns non-humanly edible calories into humanly edible food calories.
The charity I donate most money to each month is Amani Childrens Home in Moshi, Tanzania.

$50 provides medical care for an average of 35 children living on the streets.
$100 Three healthy meals for all the children at Amani for one day.
$200 First semester at Secondary School.
Go there now! Its not a gloom and doom charity, it is full of hope and positive stuff. Even if you dont donate, you'll still come away positively impressed, promise!

the Salvation Army takes most of the clothing donations, ships the crap to China where the clothes are cut into 'mixed rags', packaged and resold here in the US for about $8/lb... fuck the salvation army, put some americans to work cutting up perfectly good clothing into grease rags since they arent providing the clothes for a reasonable purpose like for wear, why sell the shit if the system isnt all about getting the cash
