can I break am almost done jar of mycellium into a few more jars

This is my first project and I've lost a few due to contamination, I have a couple that are about 75% complete can I break them down note our should I wait til they are finished?

If your already having problems with contamination then i definately wouldn't try opening anything that is only 75% colonized which is susceptable to contams

If you have to atleast wait till its 100% colonized

for an real post.  You wanna wait till they are %100 colonized.  That way you are sure you are transferring strong and healthy mycelium.  If you disturb it now, it could have higher changes to contaminate, stall, loose humidity etc.  IMO
