bruising during drying

Hi! Today i look at my ninos in the box with silica crystals and i saw them completely blue!!! When i have picked dem i have pu them in front of a fan for one day and then in the box with cristals..... after one day of fan they where normal, not blue! why??? Thank bro and sisters

Ok to eat. Next time, maybe use the fan for a longer time.

Is your produce suspended ABOVE the crystals, or just lying on top of them (touching the silica crystals)?

ive found that its best to dry up to a certain point when using a fan before placing into a drying a chamber in order to avoid massive bluing like what your experiencing...ive had what happened to you , happen to me before... it works better when you fan them for 36-48 hrs before placing into the drying chamber

OK I undestand... The matter is that today in my area there are 100% of humidity... For some things is good for others like drying stuff...mmmm Thanks

If you dry them sitting on the grill of a box fan that is raised off of the surface by 4 jars or drinking glasses and leave them there for 24 hours they will form a tougher skin on the outside. The inside will still be wet, so if you remove the cap from the stype and cut the stem in half long ways and dry them an additional 24 hours they will be cracker dry. They should be at least 90% dry b4 you switch from fan to desiccant. Desiccant is slow and you never know if it is working unless it isn't and it is too late. I use the little desiccant food grade packets like the ones that come in beef jerky, but only as a precaution after I have them completely dry.

are the desiccant packs from shoes ok to use?

yes. but youd have to save up quite a few of them.
best just to buy a pack of REUSABLE dessicants.

I would just get a bag of 100 food grade desiccant packs from ebay or amazon. They are pretty cheap and great for storing your cracker

Nearly every mushroom, I've dealt with bruises at some point during the picking and drying process. Don't worry about it. I've never seen a drop in potency.
