don't know all the details like time and date, but I went through an on camera interview and two phone interviews and looks like I'll be in the inaugural season. I still need to gather some pics for the bio segment of the show, so I'm currently rummaging through old family photos.

Just as someone who is an avid follower of food competitions like this on TV...
If I can offer you some advice (I know, kind of rediculous), but just as someone who has a vested interest in seeing you win.
These shows with these formats of spontaneous challenges with limited time for conceptualization and cooking, I've noticed that the ones who succeed tend to have some common traits.
-Being prepared for the challenges. Alot of contestants I've noticed who end up winning are those with very specific recipes already planned out based on what the challenges present. The ones who falter are the ones with poor preparation, just have brain farts and end up making either crucial creative mistakes, or just way too predictable of food.
-The main complaints that get people kicked off is flavoring. Between a contestant who overcooked/undercooked something, and a contestant who overseasoned something. About 8 out of 10 times, the person whose overseasoned gets booted.
-Keeping the plates focused and technique as a highest priority. There's nothing that pisses off the judges more than empty gimmicks or attempts to be overly complex with a dish, with no real sense of direction. If you can create a plate of food with just a couple well conceived components prepared well, it can go a long way in these competitions.
-Get a hint of your judges. Try to find out who they are, or what kind of candidates would most likely be judges. As you probably already know, there's still alot of prejudice from old school chefs regarding newer techniques, or what they call "molecular gastronomy". Some judges will get pissed off when they see a foam on a plate.
-Study the show. Watch the formats. Watch the kinds of mistakes alot of contestants have made before you, so you can stand on their shoulders before it's your turn to compete. I know there hasn't been a pastry edition for this show yet, but I think you can still learn alot by studying past episodes and contestants. If you know anyone whose been on the show previously, that's a HUGE resource to pursue.
-Set aside a game plan. Recipes that you can use that 1. Don't have a high risk of technical errors occuring (then again, if you DO pull off more difficult techniques, it's a huge plus) and 2. Which can have interchangeable components/ingredients. This is especially helpful for the "Mystery Box" challenges that are so common to the show, in which they just give you a bunch of random ingredients to put together as a composed plate.
Anyways, GL with everything, and I hope you take some of this into consideration.

Oh, believe me LS, I've watched too many of these shows over so many years to not know how a lot of these things work, that's how I got pass my first on camera interview. Ultimately none of these producers are "foodies" at all, so what do they want?
Drama, heart-filled life stories, hardship and determination, crying, yelling, etc...It's still a reality tv show that wants ratings, and you have to accept that as the very reason for being on.
I'm ultimately cooking for the judges and in the end it's whats on the plate that counts, we've both seen really good chefs/cooks get the axe knowing full well they were better than the rest.
Of course I'm going to keep it simple as I can, but I also want to show why I'm in there too.

Simplicity and flawless execution should definitely be your general priority. All too often contestants end up over complicating their dish in efforts to be unique, which in turn causes their execution to suffer. Good luck!

Didn't win, but it was a fun experience.
having only one judge in a cooking competition is kind of unfair, especially if that one judge specializes in a very niche segment of the industry, it's like having the sole judge of project runway be a hair stylist, yes it's part of their industry, but not as important as the actual clothing/fashion designs, also having only one judge makes the whole thing pretty biased, people have different taste and backgrounds, it would have been nice to get an actual restaurant pastry chef as one of the judges. Cake decorators are limited in the techniques and ingredients they utilize so giving someone something you may see at El Bulli was a bit of a gamble, but I stayed true to what I do and belief in food and cuisine.
Sweet genius airs tonite (thursday) on Food network @ 10pm, it's not my episode but I am in the opening credits. Im the one shaking the pan violently.

I know this is belated, but I just saw the episode you were on.
Firstly I gotta give you props for even dealing with the format of that show. Some of the secret ingredients and shit that comes out was just plain fucking wierd.
Cheese puffs? That's just rediculous.
You clearly know your stuff though. You portrayed alot of confidence in your technique and knew exactly what you were doing. I also think it was ballsy that you served the microwaved sponge cake.
Even one of the female contestants says halfway through the challenge that you seemed most to know what you were doing compared to the others.
But the format of the show just was really annoying, and hard to deal with. Throwing in special ingredients halfway through a cooking competition. It doesn't feel like a competition about cooking anymore, just more of like a thunderdome of randomness. The producers of the show really seemed to have lost site of why people watch cooking shows to begin with. It's all about seeing artisans perform the mastery of their crafts. Not about who can most quickly incorporate wheat grass into their deserts with 15 minutes left on a clock on a dish they've already conceived.
Anyways, nice job on the show. It looked like alot of pressure, and definitely something I couldn't do.

the evolution of cooking shows went from teaching to competition to crap, when they started calling them reality shows it's apparent that any foundation in reality was lost... I guess in reality I did learn something from that episode.... you can bake a cake in the microwave, complete the task in full and the judge likes it and you're booted from the show but if you forget about your theme you're advanced to the final round

thanks for the kind words everyone.
yes it was harder than I thought as time seems to compress itself to mere seconds; then forced to put the round plug into the square hole.
some people just have issues with microwaving food, he's not the first I've encountered. Having more than one judge who doesn't just specialize in one very specific facet of the pastry industry would have helped my chances greatly.
In the end I should I have just ignored the theme and just made what I knew would be good, in the end it's how it tastes and if the flavors make sense. He obviously would pick flavor over use of theme if it came down to it.
in other news, anyone catch the episode with the pie man? garnishing a liquid key lime pie with a bonsai tree? how fucking embarrassing is that shit?

lol... when I go to a restaurant I like to ask for food, drugs typically arent on the menu
I didnt watch the bansai episode, it's painful to watch that show but now I have to because I have to wonder where the hell he got a tree for a garnish

the tree was the inspiration, he also thought sitting the pie on top of the anti griddle will freeze it solid "in seconds"
and honestly, don't eat at Zola. We are currently in the middle of overhauling the entire restaurant menu AGAIN! we have a team of "advisers" who are helping with this endeavor and neither is successful in turning their own business around, we'll see. even with a 50% discount I still have yet to eat there. If you're in the DC area check out Palena, Two Amy's and Komi before you waste your money at Zola

Do you have creative control over the dessert menu? Thats the only reason Id go.
Ive been to Palena, 2 Amys but not Komi yet. I also like Sushi Taro, and my personal favorite place in the city is the Toki Underground. Im dating a girl that lives near H street so it makes it convenient. Thats also the most fun part of town Id argue
Another good joint is Sundevich, the Saigon there is pretty tasty

I'm alright, I'm no ewald notter but I know how to temper, mold and generally work with chocolate, I'd much rather make something with really nice porcelana from venezuela than make some grandiose showpiece out of crappy modeling chocolate.

I do have creative control at the moment, but I don't know if that's going to change in the next coming months with these "overseers" in the kitchen (major menu changes have been put on hold). and since it sounds like you're thoroughly familiar with the area, even more the reason not to waist your money at Zola. It had it's hey day under frank morales a few years ago then when brian moscatello became exec chef it went pretty much down hill the moment he was allowed to do what he wanted which was very alinea-esque, and being familiar with that part of DC that kind of food approach was never going to be a viable business model for making a profit, the heart of DC is not filled with foodies, or adventurous eaters but rather transient lobbyist and government workers with disposable expense accounts. hardly the place for wild el bulli like food that wasn't even done well or with any thought in composition or to the fact that we are far from having a kitchen crew that can or even knows about food like that. The truth is this job is very cushy for a pastry chef, I get most weekends off I work normal hours, I have full health benefits and the food group matches my 401k 100% every pay period; and in this current economic situation sometimes you have to put practicality and survival over what your heart really wants. And that for me means working at a place filled with passionate and dedicated food obsessed people with high standards, unfortunately in order to be in place like that now I would need to take a massive pay cut and lose out on health benefits and would have to work my way up from the bottom again, which at this point financially I am not able to do. One day I'll do what the ex exec chef at 1789 in georgetown did and move to denmark to work at a place like Noma
