monotub pinning early

Okay so my monotub has been taking a while to reach full colonization...the tub is clear and when you look through the bottom, you can see a few small portions that still haven't colonized.
HOWEVER, I looked at the top of the tub and there are maybe 5-6 small pins developing...I have been blocking light with a blanket but some light still goes through as I have a SGFC fruiting right next to it.
So my question is, should I pick those pins and let it finish up colonizing the last little bit, or fruit it now? It's taken about 3 weeks to get to this point,so it should have finished colonizing by now, but who knows, it's MS so yeah.

Ignore the bottom, it may never fully colonize the bottom due to moisture, compression, whatever. Most people don't use clear tubs for monos so this isn't always evident.
Go ahead and put it into fruiting conditions. Also, blocking light is kinda old school. You can colonize in light or dark. Light won't trigger early pinning, fresh air will.

Alrighty then...I'ma go ahead and throw this bitch into fruiting. Should I go ahead and pick the few pins that have appeared?

Okay cool lol...one last n00b question...should i mist/fan once a day? or does it depend on moisture levels inside the tub already? Because there is a shitload of condensation covering the mycelium.

Just leave it alone for now. Once you put it into fruiting conditions, the water will naturally evaporate from the surface. You can initially fan it once or twice but keep an eye on your hygrometer.
