5 - 10 lbs of mushrooms per basket, each basket contained about 10 lbs of dry straw saturated in water, 3 quarts of grains, and 2 quarts of gypsum. Yellow oysters are my favorite to eat, very pleasant sweet aroma.

Are you adding gypsum to the grain? the water when you pasteurize? or both?

I add the gypsum when I mix the pasteurized straw and grains together. Its layered like a lasagna, straw / grain / gypsum / straw / grain / gypsum...
