If I cared that much about any individual ingredient then I wouldn't be making a sandwich.  a sandwich is about creating a perfect, tasty, satisfying blend of flavors and textures that all come through in every bite.  its about the sandwich. not the meat. not the cheese. or the bread or the mustard or mayo or the lettuce or tomato. 

Why bother making a sandwich if all you really care about is one little part of it?  why not just eat that one ingredient on its own?  I know why: because that one ingredient is so much better in concert with everything else you like to put on your sandwich. 

If you've ever had brazilian food, you should know about Picanha (sounds like pee-con-ya, or picaña).  Its a prime cut of top sirloin called rump cover or rump cap.  Anyhow, the way quality brazilian restaurants grill this cut, its the most amazingly flavorful piece of beef I could ever imagine.  Every bite is heavenly.  This is an example of me caring so much about one single ingredient in a sandwich that I'd rather just forget about a sandwich and eat it on its own. 

But I have made sandwiches with leftover picanha and they've been the best god damn sandwiches I've ever had.  I'm a bit of a connoisseur and passionate home chef, so any sandwich I make is paid the utmost attention and care to ensure the tastiest end result.  But even day old, leftover picanha that I couldn't finish and took home from a churrascaria has made for the best sandwich I've ever had.  If you know what you're doing and what you want, home made sandwiches always beat the hell out of anything you can buy from any deli or sandwich joint
