Steam molecules spaced too far apart? You might want to brush up on fluid mechanics a bit. You got any idea of the spacing at 15 psi?
Regardless, the foil isn't to protect from steam. It's to protect from water drops that rain down from the lid of the pressure cooker during sterilization. All filtered jars should be covered with foil during sterilization. The foil can be reused dozens of times until it disintegrates. RR
BANG, thats what I have tried to tell people and no one listens...I have used the same foil for like 2-3 years and of course I have to replace it sometimes but for the most part I rarely have to make new foil tops. I actually learned that from you RR

HELL YEAH! Thats t he only way to go haha I have a basket full of ones for wide mouth and seperate one for the regular mouth lids They actually get sturdier it seems the more you use them as long as your careful not to rip them off the jars. I used to go through mad tin foil and was like this is such a waste and it goes against everything mushrooms stand for (recycling).
