getting one big shiitake when I want several small ones

Is there a way to encourage shiitake 75 to produce smaller fruits rather than on or two really large ones?

Ive also had issues with shiitake fruiting invitro. How do I know when a the right time to fruit the block is? Ive been waiting till primordia form then cold shock and soak but i don't know if this is the ideal way to go.

Skip the soak before first flush.  Are you slapping the block around when stripping the bag off?  Are you rinsing the block really well to get all the metabolites off after removing from the bag?

Cold shock for several days and then do the above.  Another problem might be over supplementation.  Ideally, whatever bran you use will be used up during colonization, leaving only the sawdust available for fruiting.  This will result in more, but smaller fruits.  If you notice fat stems or mutants, you're over supplementing.

Regardless, 75 does produce larger than average size shiitake.  If you want smaller fruits, consider the CS2 or CS3 strain, also from aloha.
