How to fruit this completely colonized rye casing?

Hey guys, long time lurker, first time poster. Basically this is not my casing, but somebody else did it and then he quit and left it with me. It is a casing, completely colonized. It's been sitting for quite a while. I know that the casing was done with coffee and I believe vermiculite. It is sitting in a plastic tub, with black tape all around the bottom, covered in a black garbage bag. I peeked inside (quickly!) to take a picture, and noticed that it is veeery humid inside the tub. When I case mine, I will use aluminum trays/saran wrap, but I really have no idea how to fruit this thing.

Do neglect tek, I live in Louisiana so the humidity is high as hell anyway, 68 percent today and this is a dry day, so I just cover mine with a piece of plastic with slits cut and they fruit quick, a temp. drop and light will make it happen, make sure the plastic has condensation on it so your keeping it the right climate.

Thanks guys. (by the way I'm in ky so yeah it's humid here too ) anyway, doesn't it have to be a sterile environment when I take the lid off?

Hopefully the casing layer doesn't contain coffee...a casing layer should not contain nutrients...but it's kinda late to worry about that.
A fully colonized substrate should be relatively contaminant resistant, so you can take the lid off when necessary.
Fresh air exchange helps initiate fruiting. You'll also want some room for the fruits to grow. I wonder if you should put that tray inside a "shotgun fruiting chamber" or something similar?
I say "I wonder" because I'm a monotub fan, so I haven't done a project like this. Maybe someone more experienced will chime in.
