Which species of edibles goes for the most money? I see that black morels are out of stock 
What are the price rates of different species of edibles? Im thinking about growing some.

morels are more or less impossible to cultivate anyway ... agaricus truffles ... ... think you can get like 30 bucks a lb for rishi ... but thats more medicinal ...

Doc_T I think that your assessment really should apply to where you live. Where I live and operate my company, we are only a mile away from the downtown of the second major city in the US which gives us a massive market of 5 star and michelin star restaurants. Due to that I can get 20 per lb for fresh oysters and even more per lb for shiitakes and other specialty edibles. In winter seasons it goes up depending on how many people are also growing indoors. However, since we are the only large producers so close we usually are favored since everything is delivered by foot or bike and grown on recycled paper or wood or brewers mash.

Don't underestimate using the mail to sell mushrooms. I'm in a rural area, but actually make most of my income from shipping to restaurants in Seattle, 300 miles away. Within a few hundred mile radius, priority mail gets there overnight. I can get 8 pounds of shiitake in a large flat-rate box, which works out to only about $1.50/pound for shipping, making it the most economical method of delivery. RR

Not true; it's all about method/procedure and location.
I think one of the biggest factors, as ShroomJew noted, is your proximity to mushroom markets, and especially end-markets. In metros or megalopolis there are thousands of locations that are paying above-market prices for mushrooms and would love to do business with someone that can regularly and promptly and charges less.

The shelf life on Shiitake makes this feasible. With oysters you'd see a greater amount of damage per carton during transport and thus a reduced price.
He said priority mail within 300 mi or so in his region takes one day. That's an acceptable amount of transport time in this industry.

Also true of kitten farming. 
Priority Mail is not always faster than First Class, but the flat rate boxes can be an extraordinary value for certain things. Big heavy fresh mushrooms are an ideal application.
