portions of uncolonized cakes

ok a good friend of mine happens to have 6 almost fully colonized cakes. on a few of them there is about a quarter size gap between the mycelium that just won't colonize. the rest is completely covered with mycelium. could he, persay, birth the cakes and just extract the uncolnized substrate from the cakes? is that fine to do?

You can cut or scoop out the uncolonized areas with a sterilized utensil or you can even burn it with a torch. A butane torch for soldering works wonders.
