Arrogant Chefs Cooking Steaks Well Done

So my friend was reading conversations on the internet, and said surprisingly, a lot of chefs get angry at people ordering steak well done, saying it tastes like "leather" and reacting in ludicrous ways. I never experienced this and always order it well done.

well done is retarded. Tastes like leather. The chefs in a lot of places go out of their way picking a choosing nice cuts and really good veggies as their rep is on the line then some jag off order it in a fashion that might as well have all the flavor and tenderness drained from it. The chef might as well picked out prison meat for the well done customers.

I'm a chef, I can vouch for the bitching. There are cuts of meat that are perfectly acceptable as well done, but generally your eating leather.
Plus it takes forever to get to well and it fucks up my bill time.

Steak is one of those things I rarely order at restaurants because it's so easy to do right at home. If you've tried steak all different ways, order it how you like, but it's hard to understand how a tenderloin, for example, would be as good well done. It's like merlot on ice.

I know you're playing devil's advocate pris, but you strike me as the "cut off its horns, wipe its ass, and put it on a plate" kinda guy to me. I have a hard time believing you rock a well done piece of meat.
That said, I agree with your assertion that when you do work for someone else, generally you adhere to their guidelines.

I used to order meat well done... when I was 12. Give a good ribeye or NY strip a go at medium rare and see what the fuss is about before deciding.

i like most of my meat (and eggs) pretty much burnt.
supposedly eating meat well done is usually because your family does it.
families usually do it because their parents did it, and so on, till you get to the point that your ancestors were poor, and had to cook the meat well done because it was spoiling or garbage meat.

i like my meat bother ways, i love a pink(not bloody) steak thats got that nice tender feelin in your mouf, but then i also like when its slightly burnt, peeps say it takes away the flavor but i think it adds some because if your cooking it right there's bound to be spices and/or bbq on it, and those burnt spots are going to be concentrated globs of nom nom nom
but the last time i ate steak when i was out i asked for it well down, they bring it out and its bloody, i eat it anyway and the kids at my table go to the bathroom to throw up and then there place gets a bad rep for 2 reasons

You can get both if you give your steak a good pan sear before grilling/ broiling. You get a nice crust and are able to still cook it to the perfect medium-rare.

Yea when I was younger I always ordered well done, guess the semi-raw meat thing grossed me out. Now it's always medium rare.

that's only on things that are ground up. the bacteria on meat is on the outside of the cut, but when they grind it up for hamburgers and meatballs, etc, everything gets mixed together so inorder for you to kill all thebacteria you need to cook it well
On a cut of steak though, you kill the bacteria which is on the outside

I find the problem to be a lot of chefs/restaurants won't cook it rare enough.
I want it red and bleeding, a lot of places around my area have policies about not serving the meat too rare... so at a lot of bigger restaurants you'll get an overcooked piece of garbage.
There are a few places around here that know what rare means, but usually I'll just cook it(or not it) myself to my liking.

I used to always order well done, then I ordered medium and while I haven't ordered well done ever again I do lack the courage to go any lower. Medium is a nice word, anyway.

I've always served it just as the customer wants, a chick used to come into a place I worked, she said let it spend enough time on each side to discolor the meat, a 30 second steak, if she'd have asked for it straight from the cooler she'd have gotten it

Too rare and the meat isn't bloody. I cook it to where its slightly above rare and the blood/juice starts coming out.

I love all steak...... even shitty cuts of cube steak with fat and veins in it. I love beef, I dont eat enough of it though because of it's bad rep. I'll eat rare all the way up to burnt because at that point it's still better than a burger. I used to go to golden corral for all you can eat steak back in my teens with groups of friends and just dominate. You have to order rare there because if you dont it's leathery and kinda greasy.

I feel it's all about age. When I was a kid there's nothing I liked more than a charred, crispy steak. I've slowly been ordering it less and less cooked and I'm enjoying it even more. Right now I'm down to medium. I can't do rare yet but I'm really starting to appreciate the natural flavor of beef.

It's called myoglobin, and it's not technically blood. It's an oxygen-binding protein found in the muscles of vertebrates.
Also, you should make sure to rest your steak on a hot grill or in an oven at 300ºF or so after cooking it to help the internal temperature lower before cutting into your steak. After violating the internal cellular structure of the meat with several hundred degrees of heat, you want to let the cut rest and let the seared crust on the outside force that juice to reintegrate into the meat. Cut it immediately off the grill, and you're doomed to a dry steak swimming in it's own juice. Let it rest for 5-7 minutes, and you're in for a juicy treat... provided you didn't cook it well, like a little kid.

Yeah I've never had chicken hearts. It sucks I have to order stuff like that. I should just start calling local farms and asking to just buy it cash, right there. It'd probably taste a lot better too.

Do they still use this in the US? I know I have seen meat like this but the argument about the outside surface being inside does have merit if food temp safety is not watched. I wonder if the meat glue used is why lots of restaurants have you sign a waiver if you get it rare.

it's still used but typically only in high end restaurants when they're going for a unusual combination or something aesthetic, my mother and I were in an asian market in atlanta last weekend and we were discussing it because it was something she'd just heard about, about 20 minutes later I spotted the stuff on the shelf... it also seems to come into use by producers of the overpriced steaks you buy off the back of a truck

well there you're referring to manufacturing, typically you wont find butchers and most restaurants using it, the odds of getting a steak that's been reassembled with the stuff is pretty slim

you can stil get them, check the carniceria, they'll hook you up with any cut, I cant find flank steak in most grocery stores, the few I do find it in it's nearly $8/lb and it's some tiny vacuum packed piece of crap, I hit the carniceria and get it for $3.49/lb and can get a good sized piece, at least double the size of the one from kroger

OK I know where you are. My sister and I got pulled over at the Citgo just south of 285 on BH on our way to high school one morning cause she ran the red light. Her purse was in the trunk and she got out of the car to get it and the cop was like "MAAM STAY IN THE VEHICLE!!!!! "
