Using my leftover frozen beef heart. (updated with pics of final product)

There's not a lot of food in the house (or money for it for that matter) so I thought I'd get creative.  The first meal I made with it was in a stew I made in the crock pot over noodles.  It was pretty good but I want to try it another way.

I cut it into cubes, seasoned with garlic salt and pepper, and threw into a ziplock bag.  Then I dug into our jar of chinese food condiments and emptied about 20 packets of soy sauce into it.  I let the air out and sealed it, I'll probably marinate it all day then I'm going to put it onto skewers, roll in sesame seeds, and grill it on the griddle.

Oh man. Ive never had beef heart but damn do I love myself some chicken heart..

Where do you buy that in the States? All the grocery stores around here don't carry either.:sad:

Sadly it seems most Americans arent into "internal" meat as my friends call it.

Do you think it would work to my favor if I glazed it with some honey or agave nectar before I grill it or would that be overkill?

If you want to do that, do it toward the end, otherwise the sugar will burn. Toward the end, I would glaze, then turn the heat up to get a little carmelization, then done.

Of course, I've never worked with heart. Thinking about it, the pieces of meat are probably not very thick and probably cook very quickly... So you might be good with the glaze from the beginning...

I'm guessing heart may be a tough piece of meat, so I'm not sure grilled skewers are going to be a great way to go, but I'm curious how it turns out for you. :smile:

The cubes are about an inch wide, some sliced thinner than others to see what works for future endeavors.  I've read I need to get a nice sear all around then turn down the heat.  I need to leave the middle medium/medium rare for best consistency and flavor (kind of a no brainer there).  You're probably right about glazing toward the end.  I'm thinking of rolling it in sesame seeds after the cooking too.  I hate how burnt sesame seeds taste lol.

Well, not really a no brainer. Medium rare works great for tender, more expensive cuts of meat, but usually long, slow cooking is best for tough, cheaper cuts. I really have no idea what heart is like, so I don't know.

It doesn't sound like your pieces will take long to cut, so I'd probably do honey about 2/3 of the way through. Any cance you can take pics of the final product?

OH MY FUCKING GOD.  This stuff tops some steaks I've had.  I just seared the skewered/marinated cubes then brushed with honey glaze, rolled in sesame seeds, returned to the grill and closed the panini press and cooked on medium for a few minutes.  It's hard to describe the deliciousness.  So far the best "weird food" I've made yet.

Looks good, man! It'd be even 10x better cooked on a flame.

How's the texture on it? Like a steak, or like an organ like liver or something?

It's like chinese ribs but 20x better.  Texture of meat, not organ.  Some of my braver friends partook and gave it two thumbs up.  :grin:

This is by far the best "weird food" I've prepared to date.  It's just sensational.

My advice:


If you're buying it as a whole heart, quarter it and throw in a crock pot with veggies. (fat on)  It adds so much flavor to the mix.  Add some noodles and you have a meal.

If you buy it pre-trimmed of all fat, slice it thin as shit (1/8") anf follow my recipe.  The thinner the better when grilling.
