Should I use poly-fil in my monotub, or is breathable tape ok?

Polyfill is what most people use. I think the tape may restrict the air flow a little too much. The polyfill acts as a barrier, but also allows good air exchange. Just watch your humidity levels in your chamber.

Cool, do you think I should build a FC for my monotub? Or will it hold its own humidity?

monos are pretty "set & forget" once you get them dialed in. It'll hold its own humidity as long as the poly is @ the right density in the holes.
I loosely stuff my holes & don't fan or mist & my monos do fine.
