Congratulations are in order RR. I know that Washington state is harder to get certified in than quite a few states. Way to stick to it.

We broke ground on our mushroom farm construction 2 years before we got our organic certification. Our small, mom-and-pop mushroom farm was laid out and designed from day one for the organic certification system plan that I submitted. There are requirements for separating organic from non-organic production and materials, and to prevent cross-contamination with non-organic and/or prohibited materials, and this extends even to the ventilation system.
Many existing farms don't meet the ventilation requirements or may have prohibited construction materials which would prevent certification. It's important to know before beginning construction what your eventual goals are. RR

With organic certification, what types of cleaning products are you able to use? Sterilising alcohols? Bleaches? No more soaps in your soak? Do you ever need to clean your grow space? Remove molds etc?

Bleach is allowed to clean areas, but not on or near substrates. I can spray out the growroom when empty with bleach. I've only needed to once in the last two years. Alcohol is fine for lab work. If I used soap in the soaks, it would have to be organic certified soap. RR

How about plastic spawn bags... are they legit? My local organic certifiers website is pretty uninformative.

Lol will your customers be eating plastic? The spawn bags are just containers and as such I don't think they are regulated against.
But who knows.

Yes. There's nothing to stop you from using spawn bags. The part of the USDA regs that cover mushroom farms are only a few paragraphs. However, the rest of the standard also applies, regarding prohibited materials and practices.
The organic standard also requires you to constantly be making the soil improve, rather than degrade or remain the same. Putting spent substrates back into nature's food chain fits the bill perfectly. It would be nice if someone would develop biodegradable bags which could stand up to the autoclave. RR
