Need advice from one with experience and time

Right now Im getting into edibles and need some ideas on how to go about my situation and what to focus on. Im doing this for fun and experience but am willing to put a considerable amount of time, $$$, and effort in.
1. I have three culture tubes sitting in my fridge, the strains contained are: Shiitake, Lions Mane, and Blue Oyster. I cant decide which one would best be suited for my environment as my house stays between 70-80F . I know I need to focus on one of these strains in order to get my start but I cant tell which one would be easiest; I don't think the shiitake would because of the time involved between start up and harvest.
2. I was thinking about getting a GH and combining several different teks to make it completely automated unless someone has a better plan, this is integral to my edible setup as I would much rather the setup be the time consuming part as opposed to the maintenance. I was thinking about this but if you have a link to better teks or any improvisations Im all ears.
3. I can't figure out what to use in order to lower the GH temp to the correct parameters as I have read that these species require lower temps.
4. Once I have my setup going I plan to do a whole bunch of rye casings and perhaps quickly move onto woodchips and sawdust. Im capable of doing monotubs but I don't think any of these have been thoroughly tested on that front. I can always order some spawn bags but I plan to save that for later.
5. In terms of the actual substrate/spawn I plan to refresh my supply of rye by putting in a bulk order at whole foods since they cover the shipping for free. Im not sure which wood chips to get yet, Iv heard alder so I may go out and get a bunch of BBQ chips.
6. Once I have a colonized rye jar I plan to fruit and clone, from that I will make a big GLC and use that for further grows.
All my agar plates are poured and contam free so Im ready to go once I have a plan. Any advice will be appreciated. Once I have this going Im sure I can maintain it and build upon the concept very quickly I just need to start. Thanks for your support guys, keep on mushing

My understanding is the Blue Oyster desire a 65 fruiting range. I am currently working on a greenhouse setup. And when I put in the coolmist humidifier it provides so much FAE even on low that my temp in the greenhouse dropped by about 5 degrees or more. The other ones I believe like a slightly warmer environment for fruiting. Either way the humidifiers, cold water should take care of your temp issue if your room is anything like what I got. Unless maybe you get loads of heat from the sun pouring in the room. My room doesn't get a lot if any direct sunlight. Although you said your house goes up to 80? I would say keep your ac lower than 80.

Out of all the edible and medicinal species that I have grown this far, I would say here is my list in order of easiest to grow:
1. Reishi 2. Shiitake 3. Oysters
A lot of people say to go for oysters your first time around, but truth be told if you cannot provide proper light and FAE your results will be very lack luster.
I have tried to fruit Pl. djamor in my greenhouse and SGFC and find that floro's do not provide enough light, and my setup does not provide enough FAE.
When I grew the pink oysters outside it was a different story and I got nice big meaty fruits that looked beautiful. Also note that growing oysters inside can be dangerous due to the large spore load that they give off, overtime this can turn into a severe allergy to oyster spores, just ask RR.
Shiitake does take a while from start to finish, but it is worth every second of the wait in my opinion.
Here is a grow I did, shiitake on pasteurized fuel pellets: https://www.shroomery.org/forums/showflat.php/Number/14247246
Lipa's pasteurized fuel pellet tek https://www.shroomery.org/forums/showflat.php/Number/14258160
Good Luck, hope that all helps!

Hmm, maybe I should just order some reshi. The most crucial point of success is the temps. If they will grow between 70-80 I will most likely be able to handle the rest. I probably sound like an idiot right now not having looked far enough ahead to plan for these edibles but I have been overwhelmed with several different projects
I think I will start up my shiitake soon, for something of that sort tho I will probably need to go the GLC rout first for fastest colonization and to make sure that if something goes wrong and they don't fruit I will have a backup; kinda like a save point in a video game.

I looked further into Lions mane and realize that the only time they require temps as low as 60 is during primordia formation, if there were some way to get the temp that low I could make it with what I have

Hericium forms primordia at every stage on every substrate even when you don't want it to. Not sure I've ever tried it in sustained temps in the 80's but I imagine it wouldn't be a problem. Worth a shot at least.

I've grown mushrooms before, but not really cultivated like i am now but if i was talking to a fellow rookie grower i'd say start and the end and work backwards. First and fore most get your fruiting set up right. I didn't do this but it's so critical to good results. Think about what you'd like to grow, understand what they need and make sure you can tune and vary your fruitin area for whatever is in there, or the stage of fruiting it is at.
And to do this i'd buy ready to go kits from commercial or hobby growers. If you succeed, sure, take some spore prints but save for much later.
Next step, understanding, preparing and packing substrate. I'd buy ready colonised grain spawn from a hobbyist for this.
Then once those two steps are mastered i'd step back to grain prep and g2g transfer. Once you are self sufficient there, then step back to agar and then gathering more varieties etc.
I don't practise what i preach, well, i still haven't returned to agar after a failed exp. So maybe i do.

Are you looking to sell mushrooms as a business or just grow them as a hobby?

Hobby, I don't think I could make much with lions mane considering the short shelf life and all. I just want to grow some food:hungry:
