What am I missing?

I have all that except perilite and a pressure cooker. Is there another way to decontam soil? and I plan to use grains instead of perilite.

perlite is for the FC. and you can sterilize that by a) nice bleach bath, make sure you rinse well after you soak in bleach, as in no chlorine smell left behind. b) lay it out on a tray then put the tray in the oven and set to 350. give it about 35-45 min AT 350.
youd do all this after your first batch of cakes or trays are done.
or you could just buy new perlite

Do not take this the wrong way, but I can tell by your post you are not ready to successfully grow edible or medicinal mushrooms.
Take a trip over to the following link, watch the videos, watch them again, take notes as far as what materials you will require and soak in the procedures.

Take EM's advice. These sources will help avoid confusion.
Perlite is used primarily to maintain fruiting environmental conditions. Grains are commonly used for spawn.
