stalled jars? help!!

This is my first grow..  I noc'd up 20 jars or so about 5 1/2 weeks ago.. I am doing the PF tek, and followed it pretty much to a tee.  I have my half pint wide mouth jars in a tub in tub incubator set at 79 degrees.  My house gets pretty cold so I had to use the TIT.  I had signs of mycelium after a couple of days and thought everything was going smooooooooove.  But the growth has been slow/stagnant/non existent for a couple of weeks now.
  Most of the jars are over 50% done, some are closer to 75-8-% done.  A few are slow, and look to be 25% colonized.  I dont have tape over the holes.  I have loosened the lids to try and get more air/gas exchange.  I even flipped some of them over for a couple of days to see if they would kick into gear.  Any thoughts?  Here are a few pics of different stages of colonization.  Thanks  in advance.

They look 100% colonized to me are u sure thats not vermiculite that has fell off the top of ur cake and is on the side of the jar to make it look not fully colonized it happens alot>      if not give them more time!

You should definitely cover/fill your holes!
Cut a piece of paper towel big enough to cover the hole, dampen it, and tape the sides of the towel down! That keeps debris, most spores out and makes a humidity barrier. Speaking of, how is your humidity level?

Isnt temp supposed to be a bit lower? Like around 60-75?

I looked at ur Pics again and concluded these jars are ready to Fruit there 100%  Thats just Verm on the side of the jar that has fallen from the cake shrinken!

I done a TOn of research on this subject.  My conclusionis that there is no correct answer, or depending on who you ask, what you read it can be ideal between 65 and 70, 70 and 75, 75 and 80, and 80-85

Take the lid completely off one of your jars and give it a day or two. The dry verm layer will keep your cakes safe. If it works, then do it to the rest. If it doesn't work, you lose a jar. You can birth them right now and you'll be okay. Just wash the uncolonized part off and give it a light scrub, then dunk it. I've birthed jars prematurely before and they did just fine.

Don't do that.
Cakes shrink once they colonize, so the dry verm falls down the sides happen more if you mess with them a lot.

Can't really tell if all of your jars are done, but in my opinion they are.
Maybe birth one
