Efficiency in question

I am using WBS as a substrate and when I first started the hobby I used a terrarium filled with perlite and small 5x2.5x3(depth) aluminum trays. I would use about one fully colonized pint jar to fill up these trays and four trays would fit in my terrarium. Using this method I was able to harvest well into 100 wet grams from the four jars alone.
After a while I changed my method up and got about a 12x6x3-4(depth) aluminum tray. And instead of putting it in a terrarium I'm using a plastic dome that seals over the aluminum to allow light and keep in humidity.
Anyways I've been using 5 jars to fill up this tray. and harvesting only about 50-60 wet grams.
You may ask why not stick with your old method. Well my old method for some reason or another decided to stop working??? Pins would form and then growth would halt. Obviously this is my fault somehow. But I believe that is for another discussion.
My main question is should I use more jars on this larger tray? next time I case it I think I'll tray 8 jars instead of 5. I'm worried that the substrate isnt deep enough to yield its potential.
Any insights would be appreciated, and if you've gotten this far thank you for reading this long post.

it's the water-holding capabilities of those 2. I like to dump my spawn and bulk in a big zip-lock bag(you can get them up to 10 gallons)to mix it up, then dump it into the tray. It's easier to get it well mixed, while still not exposing it

check out my gallery...i dont really know what you are asking ...spawn tek??? i layer...wbs rocks....i get at least 30+ grams dry per quart spawn...4-5 quarts per tub min. with 3-4 inches poo...coir...wormcastings...gypsum...and some times straw...top layer heavy on spawn..cover 3/4 inches of bulk sub ...no bag...no tape...tight pack poly...i flap the liner over loosely...open it to air it out...just lift the lid 1 time...at 3-5 days i open liner covering sub.. if too wet...air it a little...close it,look again at day 7-9...if 100% colonized ...cut/roll down liner...loose pack poly...start mist/fan...somtimes i pull poly out 1 hole for a day...mist little extra at that dry spot...then poly back till harvest
