Hello! Can anyone point me in the direction of some literature/research explaining mycorrizhal relationships physically and chemically. If there is information about gourmet mushrooms specifically it would be much appreciated, thanks in advance!

Here are two great websites that should provide you will all the info you need. The material is presented in a very pragmatic simple fashion. Lots of pics are also included to reinforce the text, and links are included for research into more advanced primary literature.
It really illuminates the folly that many seem to follow when they simply want to pour a mass spore slurry on a plant and expect to wait a few years and miraculously they have truffles or boletes. If you want to look into attempting to propagate mycorrhizal fungi I would look into the research based on their roles in phosphate poor soils, and the importance of what is known as mycorrhizal "helper bacteria".
