Pressure cooker problem (pressure build up)

So I borrowed a friend's old Presto 23 quart pressure cooker (the kind with a gauge on it) and used it this morning. I ran it for 90 minutes, and everything went fine until the last 30-40 minutes.

At that point, the flame on the stove was a low as possible, however the pressure kept slowly building up in the PC. Once it hit 18psi, I'd turn the burner off let the pressure decrease to 15psi, then fire up the stove again and put the burner on low. Repeat about 4 or 5 times.

It was really odd. I've never had that problem before, but then again I've never used a non-weighted pressure cooker before.

Any ideas how to avoid this next time? My only thought would be to make an aluminum ring (say 1/4" thick) to sit in between the burner and the PC so as to make the PC farther away from the flame. I'm open to suggestions though.

How long did you vent it before sealing?

Punkin: Good idea. There's at least 1- 1.25" of water left after a 90 minute cycle though.

Roger: I poured already boiling water into the PC with jars loaded and turned on the burner. I then let a good head of steam build up for about 10 minutes before I sealed it up. (Steam was coming out of the vent pretty good/pressure built up pretty fast.)

The pressure was really stable at 16psi for a while. Then like I said at the end it just kept creeping up.

once your load come up to final temp at the core the pc was no longer adsorbing heat and was accumulating because the heat had no where else to go. This is especially a problem when the load is light. To combat this problem I use refractory brick, if there is room in a light load I place a brick or two in the pc, at the bottom, under the substrate. The brick has standing thermal mass meaning it will adsorb and release heat slowly. I my AA1941 I put two flat under my bags of sawdust and those bricks hold up the bottom grate. In my x 75 I have a half of a brick for the same reason. Thermal stability. I can tune in the flame and cruse as a steady PSI for as long as I want. You may also have to find a burner with a lower setting. Everything is relative, and when you find PC runs that are tuned in to habit all your problems must get solved then you may just worry about making the mushies :goodluck:

Thanks for the advice all. I'm gonna do another batch of grain this weekend, so I'll give the brick/more water a try.

That isn't going to help.  If your stove burner is too powerful, you need to vent the excess steam out.  Don't seal the PC tight.  Using more water or a brick will only help until temperatures equalize, and then you'll have the same problem.

Balls.

Oh well, I'm gonna give it a shot again anyways. I'll try leaving the vent a bit loose and adding more water/brick.

Even with all this mess, it sure was nice being able to do 15 jars and 1 bag at the same time instead of using my 16qt alone.

It has no pressure control valve? or is that what you are calling the vent?

It has a screw type valve. Once you have a good head of steam coming from the valve, you tighten it down to build up the pressure.

Sounds like it's been modified. They replaced the nipple and weight with a toggle.

I've got prestos that are 50 years old, all have weights controlling the pressure.

do you have a pic or model number?

PT- It says on it, National Presto #21. You can see the screw valve in the back of this photo I found on the net (the only one I found). It is the black part.




RR- you were right. I just kept the screw a bit loose and proper pressure was maintained while excess pressure whistled the whole time.

Have I mentioned how much I like saving time by running two PCs at once? :wink:
