I have a problem. I've been away from home, and it has been soaking for 36 hours already. Is it a problem, and should I start all over again? .. or should I now simmer for 20 minutes or skip that part and then go straight for the sterilizing part?

What do you suggest me to do.

Simmer just until the grain is cooked al dente, steam dry in wire mesh strainers. :thumbup:

That shit seems to ferment after the recommended time frame.
I always ditch it and start with fresh stuff if I soaked too long.

At 36 you are still ok, Just get to work. Rinse real good & watch your moisture content  before loading in jars. Any thing bad will get killed in the 90 min PC run. Moisture content is key !!!

I can actually see some bubbles coming up from time to time. But why is fermenting bad, when I will pressure cook it all anyway?

:shrug: I just dont fuck with the shit because its dirt cheap. No reason to risk my jars just because I forgot them and soaked them forever.
I hate dealing with wbs when it smells all gross

It's a normal part of the soak, but at the same time you don't want to end up with too huge of an initial load of bacteria.

but there will be some bubbling and fermenting during any grain soak.

or you could just use FooMans method, and skip the soak and simmer altogether.. well, if you are using it for grain spawn, and not fruiting off of the WBS.. just a suggestions..

i would say fuck it and start over. as somebody said ive had problems with fermenting and contam with wbs...

if you choose to keep them, i would skip the simmer stage and dry em out, then right in the pc. If you simmer you might have a  lot of burst grains after you pc them.

don't start over, everything is fine. I soak 36-48 hours, wash with anti-bacterial dish liquid, no simmmer, drain/dry and pc 90 mins. When I simmer all the kernals bust. It isn't the end of the world, but I don't like it.

then heat it up slower.. keep stirring.. idunno.. its not really hard.. i start the water before it even gets the WBS, when I see a simmer, I drop it in, bring to a simmer, and let simmer.. and not even a boil.. haha.. a slight simmer..

but I dont even simmer anymore.. thats how I would do it before.. never really got burst grains unless I went too long or too hot..

well, yeah.. you want to get it kinda hot, because as soon as you dump in the cold grain, it will cool down the water temp..

but even then, you shouldnt see burst grains after PCing, unless it was over simmered or simmered too hot.. it doesnt take much to get water in them, and they dont need to be mushy, either..

FooMans tek FTW.. lol.. never looked back after learning this one...

Don't soak quite as long if you get burst kernels during the simmer.
But the point I was addressing was "after you PC". they'll come out of the PC the same as they went in.

Simmer in the soak water, then steam dry in wire mesh strainers.
Like in RR's rye video. But the grains are softer so you don't soak as long.

You can cook grain to a soft mash and still have it colonize, though it's a PITA to work with.

i meant that in his situation, after over soaking, if he simmers his grains will probably burst
