Lol. I just got my first pressure canner. Kind of wondering specifically why the name change and why a pressure cooker isn't good for canning things.

From what I understand, the pressure cookers are made for cooking food quickly on a stove - quick heat up and cool down, plus the user isn't all to worried about the pressure - so lots of pressure cookers don't have a gauge. Someone may use one to cook a roast in half an hour instead of three hours.
  The pressure canners have a gauge and valve and are usually much larger to hold lots of jars since people are canning food which require a specific pressure/temperature for a set amount of time. The accuracy and bulk is needed for safe long term storage.
  It seems that the terminology applies mainly to size and the presence of a gauge. Then the jokers throw in the others like autoclave and steroclave....

i think youre right i think i was talking about a sterilizer and pressure cooker....
