Doc's WBS Question

I am following Doc's WBS method. I followed it exactly yesterday, the WBS has been left overnight soaking and am now at 24 hrs. If I leave it one more day to soak am I going to have moisture issues with it during colonization?
Should I get rid of the water and let them sit until I can get to them tomorrow?
Should I still simmer them for 20min tomorrow?

It will likely smell like shit and begin to ferment. That being said though ive had success soaking 48 hours many times before so you'd be alrite. Moisture content isn't the issue u always gotta drain it good and let them dry just a little anyways.

I made some WBS week or so ago for some oysters using that method. I soaked it for about 28 hours, then rinsed several times and simmered it as the directions said. The simmering made the grains absorb a lot of water, I couldn't tell that soaking it did all that much. I let them drain a long time.
I think the soaking is more to germinate endospores and get the miscellaneous crud out (like with rye) than absorb water but I could be wrong here.
So far, a week in, they are colonizing happily and there are no contams or moisture problems yet.

You guys should all watch RR's grain prep video, do it like that. Soak, simmer, strain.

Longer than 24 hours soaking is not a good idea. If you can't PC or simmer right away, dump the water out, rinse very well, then load them into jars and slap breathable lids on them. Place all the jars in the fridge. Don't leave them like this for more than 2 days, max.
While cold will slow the growth of critters in/on the grains, if you wait too long you'll end up with a disastrous science project in every jar. Every kind of mold you can dream of, bacteria, and the grain itself will grow given enough time.
The main purpose of the 24 hour soak is to encourage endospores to germinate, so when you PC the grains, they'll get nuked. Without the soak it's likely they'll survive the PC then come back to haunt you. Some people say they rinse, simmer and PC and they're done, but I'd rather trust my own experience over hearsay.
