How do I avoid mycelium secretions?

Hi, I have two monotubs (pure horse poo with rye grain spawn 1:4 ratio) on the go, they are both nearly fully colonised when I checked yesterday (5 days after spawing) and noticed pools of secretions on the surface. I have had perforated aluminium foil ontop since the beginning. Its yellowish in colour so I'm convinsed its not condensation. Anyway this is the second monotub grow Ive made, and both had this problem. Last time the colonising temps were too high and an area in the the middle of the surface of the substrate fermented, which resulted in that area bearing no fruits (in fact there were only fruit around the sides but theres another bewildering reason behind that). This time I have the temp at 21 celcius mesured from ontop of the foil, so I guess the center of the substrate would be around 26 or so? Could this still be too high? could this be the reason of the secretions? Ive gathered the secretions are a reaction to fight off bacteria or contamination. So have I not pasturised the HP properly? I pasturised at no higher than 75 celsius for just over one hour. I hope this wont afect the harvest too much. I am going to soak it up with paper towels, but I was going to do so when I put into fruiting conditions. should I do so now? thanks

These enzymes are secreted to help break down substrate materials and also to help ward off competing organisms. Why are you wanting to stop them? RR

So its a good sign? Does this always occur? I suppose if it helps breaking down substrate material then it SHOULD occur...So should I leave it there or soak it up? immediatly or when it fruit it? Would this not stop pinning under the pools?

I'm planning on consolidating for a week after full colonisation, then introducing fruiting conditions. When I do so, should I soak up those pools? Sorry to repeat myself, I'm a little confused. Ive understood they are normal, but still wondering whether at a certain point I should soak it up for the pinning.
