Great video. Thanks! According to the website the setup is less than 30K? Including the steam sterilizer? That sounds low for that type of heavy machinery.
The spawn ratio! About a half a cup to 3.5 lbs of sub? I wonder how long it took to colonize.

Wow, that's about a 1:50 spawn ratio! [Fixed from 50:1 due to being back asswards.]
I have a theory about how they are able to do this (besides just a good sterile environment). Since the inoculation is just at the top, the colonization of course progresses steadily to the bottom. As this happens, there are successive flushes of mushrooms. By the time it gets to the bottom, there IS contamination. But who cares, so long at this is around the time of the last flush?
I'm basing this largely on the observation that Shiitake is a SLOW grower. I've got sawdust bags of it which are almost a month old and are still not fully colonized.

What strain are you working with? Using 75 and another strain I have I can get a 5lb pasteurized bag to colonize in under 14 days. Same seems to appear true for supplemented bags, but I will know better in a week or two.

I'm using a strain called WW70, which is a warm weather Shiitake. I took a look at Stamets' GGMM, and he gives a spawn run time of 35-70 days, depending on strain. I don't have Shiitake 75, but could its popularity be in part due to its unusually fast spawn growth?

Timeline I have experienced with Shiitake:
Agar>Grain = 10-14 days to full colonization Grain>SD block = 10-14 days to full colonization SD Block>Brown = Month and a half to cold shock Fruiting>Harvest = 5-7 days
75's popularity is from its strong genetics and large fruits it produces as far as I understand it. I have yet to fruit 75 but have many blocks on the way.

I was reading Aloha Medicinals online book and they recommend a spawn ratio of 0.8% - 1.5% for oysters. That would just be 23 grams for a 3.5lbs bag. AND they show it the same way of just pouring a little spawn on top. They say 4-6 week to colonization and 4-6 flushes.

I thought we were talking about Shiitake? Anyway, I'm glad you mentioned the Aloha Medicinals online book, because it's a great resource and I didn't consult it. Their Shiitake chapter says a spawn ratio of 5-7%, which is a 1:20 to 1:14 ratio. They also say a 1-2 month incubation period, at least on straw.

I forgot, this book has multiple Shiitake pdfs with no names in the index! Pdf 4-04 is Shiitake Bag Cultivation in China. There, with sawdust bags, they use a spawn to substrate ratio of in general 2-3%, which is 50:1 to 33:1. And the spawn run is generally 90-120 days.

damn motherfuckers what a farm
they inoculate each bag with a ridiculous amount of spawn, and manipulate the spawn without too much care... interesting.

That little book is also a sticky thread at the top of this forum.
I use about 1/2 to 3/4 cup of spawn for 6 pound substrate bags. I've brain farted and called this a 1:10 ratio before, because I use one bag of grains to inoculate ten bags of sawdust. However, my grain spawn bags are half the size of my sawdust blocks. 1:20 sounds about right.
With shiitake, less is more. If you supplement too much or use too much spawn, you'll get fewer mushrooms and lots of mutants. RR
