Psilocybe cubensis is a species that has a hollow stem. Always. Stipes can be more or less meaty, but will always be hollow to some degree.

I have had some that are completely hollow and others that are pretty thick and meaty without hollowing. Genetics? Luck?

I will say that the ones I have fruited in lower temps tend to be much denser.

Do they take longer to grow in lower temps?

Yes sir. Here are some pics over the past two years worth of grows.
Indoor, cooler fruiting temperatures (65 F) -thick dense stems (stipe).

SGFC fruited out in my shed, with warmer temperatures (80 F) -hollow stems.

Outdoor with varying temperatures (65-85F) -thin stipes but not hollow.

These are just three examples. I think that it has more to with genetics, than environment, but I feel that the environment definitely contributes. Also, these are all Ecuador.

this is not true at all
grow in colder temps and you will not have hollow stems, as well the fruits will be more potent..

Grown in lower temperatures, the mushrooms will have meatier stems, that is true. But they will always be hollow!! That is one of the distinguishing features of the species. For example, P. cubensis has a hollow stem. If it doesn't, that is an extremely rare genetic mutation. On the other hand, Boletus edulis has a full stem. Regardless of the temperature they're grown in.

Every single cubensis i've grown in colder temps have full solid stems, not hollow at all....and I grow at 65 degree's..

 This is a full stem.
All species in the genus Psilocybe have hollow stems, the hollow part can be very tiny, but it's always there.

I spent some time last night and today looking for this picture to share with everyone. This is PE variety of Ps. cubensis grown by penhed. This picture was taken by Penhed and posted in another thread.

Solid ass stem of a PE fruit, yet still a "hollow" stem.
Thread that picture came from: https://www.shroomery.org/forums/showflat.php/Number/14165289#14165289

we'll see EM, i have my APE fruiting, and pins are all over the place...and yet again my normal 65 degree temps, so I'll take pics of the stem
I know for a fact my other cubes have been solid stems at 65 degree's

Time will tell, I am not trying to start an argument I just saw that picture days ago and wanted to share it with this thread.
When your APE are ready be sure to cut a few, some at the stem, some lengthwise down the body to show a cross section. Curious to see how they turn out.

RR via UTFSE says...
http://www.shroomery.org/forums/showflat.php/Number/13864881#13864881
Very fast growth causes hollow stems. This can be due to high temperature, or a less nutritious substrate. If you have a nutritious substrate, growth will be slower and stems heavier. If you have a substrate like straw, growth will be very fast, and often hollow stems form. The same thing happens with higher than normal temps. Growth speeds up, therefore hollow stems are more common.
The speed of growth can also have genetic variations, thus a multispore grow with several strains might have some hollow and some solid stems in the same substrate. RR

And a few more...
Any strain will grow hollow stems if grown in high temps. Keep them at normal room temperature or below with plenty of light, and you'll get really nice meaty stems. RR
Hollow stems are usually a result of very rapid growth due to high temperature. Mushrooms grown at a lower temp will be denser with solid stems. RR
When grown in cooler temperatures, cubensis will have solid, meaty stems and caps. When grown in warmer temps, growth is faster, but you'll have hollow stems and less total weight. RR

Hey i know this post is a bit old but i have a picture of my first grow. The stems do not appear to be hollow.
This is either B+ or Brazilian strain, i labeled the tin foil tops of my substrate jars with the names but one day i got stoned and put new pieces of heavier duty tinfoil and forgot to label them.. all the mushrooms in the picture did come from the same cake however

Cut that stem right in the middle and then see what you got.
Hope you don't get flamed to hard for resurrecting this old thread.

If anything I'm going to flame you for bumping it back up. J/k
Like the person above me said though you should cut that thing down the center. It appear as though that's the very bottom of the stipe which typically isn't hollow since it was the start of your mushroom and has had a lot of time to get fat like it is.
Other stems in your pictures look to me like they are beyond hollow and have hardly any round shape to them at all.

good to know that when i start the colder temps bring on the thicker stems.
