Can I get some quick schooling in deep frying?

I have some chicken breasts I'd like to see turned into some breaded, fried, buffalo chicken strips.  My stove is unfortunately electric and doesn't have temps on the knobs, just Low (...) High.  If I breaded the sliced strips in flour, baking powder, cayenne, etc and threw them into some peanut oil, what setting would the burner need to be for me to cook it crispy without burning the breading, while also properly cooking the chicken?

i would just use the notch under high.  8-9 range if high is 10. if yer oil smokes while cooking, lower it a tad

you want the temperature to be about 350-375 F

I think that's somewhere around medium-medium high.

If you have no way of telling, just do a couple of single fires at first until you find the "sweet spot"

Also make sure to leave enough time first for the oil to get up to a stable temperature for more consistent results

oil thermometer :thumbup:

trial and error

peanut oil has a high smoke point, so don't be afraid to get it hot

you can use some of the extra batter to test the oil before you add your chicken

Well it turned out just awesome.  I pounded out a breast and sliced it up, breaded it up with a completely eyeballed mixture of flour, baking powder, cayenne pepper, and soul food seasoning.  Kept the heat on full high, cooked for about 2.5 minutes and they came out with the perfect texture and moisture.

Then I tossed them in some hot sauce, prepped some blue cheese dressing, and had some of the best home made buffalo chicken I've ever made.

Winging it seems to be my M.O. when it comes to cooking.

Regardless, deep frying at home can be very messy. Try and be extra-neat when you deep fry.

have your oil hot when ready to fry, don't fry too much at a time and change your oil regularly, make sure whatever you're frying is as dry on the surface as possible.

Yeah that mixture I concocted really makes them feel/taste like restaurant quality wings.  You have to use chunky blue cheese or it's just not the same.  :grin:  Plus if you slice the breasts thin enough they retain their moisture and cook fast enough so you don't overcook the breading.  I'm tempted to use pancake mix and beer next time to give it a nice beer batter.

My girl is a vega nd we fry hella_vegetables.

Mushrooms, baby corns, green beans, etc.

We love deep-fried shit.

And I agree, it's 100% trial and error.

I thought I should clarify that they're not really wings, they're just sliced breasts, but when you do it right they fry into the figure of buffalo wings.  Just fry em up, throw em in a bag, shake some hot sauce into it, and shake.  Do it quick or they'll get kinda mushy.  They're still fuckin BOMB, but the crispy skin is still more desirable.

what kind of oil did you use?

peanut is the best i think, wont smoke as much as other oils, and adds a great hint of flavour, not really nutty, but something extra. some say its bad for your health though. but fuck, youre already deep frying, might as well go big.

if you ever see panko breading, try that. so fucking light and crispy.
