go with the kernels. the bran would be missing the endosperm and the germ, which is where most of the nutrients are held.

I just started a batch of wheat berries for the first time the other day. Nocc'd them up a while ago so ill see how they are doing in a few days.  I did some WBS right along side to compare results. I was able to get the wheat berries right at my local supermarket in the bulk foods section, although i could not find rye.

After pc and hydration, the wheat berries look almost identical to rye berries, and should perform similar..

As for comparison this far, i prefer the wheat berries by a long shot. why?

-wheat berries made A LOT less mess, a lot easier to work with
-way easier to get the hydration right, i struggled to get the wbs at the right moisture for hours, the wheat was at the right moisture level after a few mins.

If they provide good fruits i think i will be using wheat from now on.

My most favored aspect of wheat/rye is that they don't require a shaking after coming out of the PC. Any WBS-type grain I've used always clumps together REALLY bad, and there's always a pool of condensation at the bottom of the jars after pressure cooking and I have no idea why.

I did a side-by-side experiment when I bought the wheat berries. Both the wheat and the milo were prepared the EXACT same way. Milo = bad clumping, and pool of water requiring a shake after sterilzation.

Wheat berries = just perfectly perfect. :bliss:

Rye is a type of wheat, so, hence the confusion. Both will work nearly identical, at least in my experience. Actually I noticed no benefit whatsoever of rye over wheat, so there's that. :wink: Maybe the rye would be slightly better in terms of micronutrients, which would benefit during fruiting, but I doubt it would be a measurable difference.

i normal wbs prep i use, the wbs doesn't clump at all, it breaks free nice and flows evenly in the jar...do you add a pinch of gypsum before PC'n?

i soak in gypsum water, then rinse, and simmer in clean water...let steam dry, load then add a pinch of gypsum then PC and works flawless.

As I said, I prep my grains exactly like RogerRabbit. So yes, gypsum is used, and makes no impact. Since when I prep rye or wheat there is no clumping doing the identical procedure, it stands to reason it's the grain, not my procedure. I've tried many, many different things in the 4 years I've been using WBS/ milo.

So, you mean to tell me, that when you take your jars of grain out of the PC, without shaking them whatsoever, there is absolutely no clumping?

"Breaks free" sounds suspect. :lol:

If it works, great. You've gotta be quite literally the only person I've ever hear say they didn't need to shake their WBS after PCing to break it up.

ok bad choice of working, but yes, i pull out of the PC and turn upside down and the grains flow freely , not clumped all together.
