When to initiate pinning

This is my first time growing, and i have a couple of questions about casing. I started off with a myco bag, and only 20% of it colonated because the rye berries dried up. I was worried that i did not have enough substrate for it to work, but i was told it would be cool to plant it. So i planted the ones that colonated in my compost. I just mixed the colonated berries in at random all over the compost. The compost was put in a rubermade container that i covered by putting 2 plastic bags over it. I then set it on a heating pad and put the whole thing in a box. (a wicked gehto terrarium) After a week went by the mycelium is growing like crazy again. There is patches all over the top, and about 50% of the surface is covered. But i read on here that its bad for the mycelium to cover the surface. So i was wondering if i should initiate pinning. But the thing is i don't know how much is colonised underneith the surface. And the mycelium might be poking out the top just because of the placement of the berry. So im wondering when i should take it off the heat and expose it to the light. Also i was wondering if anything could be gained by spreading a layer of vermiculate over the top.
