The Horrible Secret About Gypsum

All right, all right.... i gussied up the title a bit to get people to read this....

I was wondering: what does gypsum really do? I just bought a big bag for an unreasonable price and was wondering if someone could tell me what it really does. I know it probably balances out the pH b/c it has calcium in it, but does it have any properties other than that? Some people suggest putting "a knife tip full" of it into grain jars.... what does this do?

This isn't too important, but if somebody could enlighten me, I would be very grateful.

It also prevents grain from sticking, thus makes it better shakeable.

"prevents" might be a too strong of a word though, it "makes it stick less" is a better expression.

You use calcium carbonate to adjust pH

Gypsum is calcium sulfate hydrate

Gypsum Salt (Calcium Sulfate) is produced when calcium carbonate (a base) and sulfuric acid react, also producing water and Carbon Dioxide.
