Micks Hot Sauce Experiment

This was my first attempt at making hotsauce. I was turned on the idea after trying some stuff made by Dexter Holland of The Offspring. He had this habenero sauce called Gringo Bandito

its really good flavor for the peppers it uses, which you would expect to burn your ass off. I have no idea what he puts in that shit, but Its a blend of spicy and sweet. I went for the same type of approach with my sauce, in the next post.

First I started with the hots+garlic:
4 Habeneros 1 Jalepeno 3 Serrano 2 Anaheim 3 cloves of garlic
I baked these in an oven set at 200f for 2 hours to help tame some of the spiciness. Afterwards:

I also partially caramelized some onions, and used about 1/4th shown on the picture in this recipe (oven @ 200f for 2 hours):

Once these elements were ready to go, I put them in a coffee grinder and was left with a puree. This went into a pot.
I also added to the pot: 1 1/2 Tblspn Mustard 1/3 cup molasses 1/2 cup brown sugar 1/8 cup Malt Barley (this was given to me by shroomery member Closed Veil, for a contest I won... I received it in the mail earlier today, and am glad to be using it on cool stuff like this, Thanks CV!) 1 Tblsp chili powder 1 Tblsp chopped, 72% dark chocolate 1/2 cup applecider vinegar + dash of balsamic vinegar 8 oz. tomato sauce
All in the pot looked like this:



I let this simmer on the stove for an additional hour and a half, stirring often to prevent burning on the pan. Afterward, I cleaned out an old Tapatio bottle and funneled the sauce into it.
There was some sauce left over, so I did a taste test on some rice I had laying around. It was hot, but not overwhelming. Definitely a bit of a kick, rounded off by sweetness from many different elements: chocolate, barley malt, sugar, molasses - they are all present in subtle form. The spiciness hit clean and strong, left its mark, but didn't leave me grasping for water. I wasn't overwhelmed at any time, but it was hot. The habenero may have been the dominant flavor here, and might be taking away from the other peppers. Ill have to try it again tomorrow once the flavors have had time to sit together for a bit.
For my first attempt I am so pleased with the results. This hot sauce cost almost nothing to make, and I can tell its something ill be using a lot. My rule to try and keep bias out was that the sauce should be something I can use on any meal (that uses sauce), and it should be able to make any meal better. I think this sauce accomplishes that so far. Ill try again tomorrow and report back:

Tried it today, the flavors are there man, its fucking perfect! Had it on some fish tacos with beans and rice. Compared it to Gringo Bandito, which the restaurant also carries, and I liked mine better. The former was to vinegary. The only problem I see is that my consistency is too thick. Its not glued to the bottle or anything, but pours slow, and I had to remove the plastic hole so I could get a decent amount on the food.
Maybe water would remedy this, though I wouldn't want to lose flavor.
Why does everything marketed have xanthan gum in it?

i find the best for add pure heat is thai chilli peppers, dried out, and soaked in oil for a few weeks. so good.

also, just thought of this.
Try to eat your sauce quickly if you didnt use much vinegar, the high acid content of commercial sauces helps preserve it.
too much sugar, not enough acid is asking to get sick.

yeah. next batch will have a bit more vinegar and less sweetness. after a few days it almost changed in flavor from hot to sweet with a kick.
we finished off the first bottle last night. ill try another batch tonight or tomorrow

yeah, i got a bunch of pepper seeds, i'm really excited!
i have a bunch of habanero chili, cayanne pepper, serrano pepper, peter pepper, jalapeno pepper, and ho chi minh pepper seeds.
i should definitely try making my own sauces with some of those babies.
