Confused about diversity of wheat berries

I decided to try my hand at wheat berries as a growth medium, but I wasn't prepared for the diversity that I found when I visited the local market. I have access to red hard wheat berries, winter hard wheat berries, soft wheat berries, and rye berries. They also have wheat berry flakes, which look like whole berries that have just been run over. Can anyone advise me on the type that will best suit my needs? I realize that the differences may be minor, but I have a feeling that the 'hard' and 'soft' berries absorb water differently and I want to make sure that the grain prep tek that I follow is applicable to the grain type that I use. I also realize that rye is different than wheat, but maybe one is preferred over the other? The grains will be for mexicana A sclerotia growth.

use rye berries... and try to make sure they are organic...
