questin bout dunking

can someone explain why of the some of the good guides on youtube it says make sure you don't get drops of water on your cakes as it'll hurt them but it's ok to dunk them?

when you dunk your cake you allow it to hydrate fully again. when you dunk it you should let it dry a little before you put it in your fc.

having water just pooling on the surface of your myc can cause problems, thats why you dont want pools to form, little droplets from misting are great, as long as you fan them to help them evaporate.

Also, large drops of water falling onto the mycelium can damage the cake. That's why you should mist with a fine mist and mist from above, rather than mist with beady sprays that shoot droplets at your cakes.
