im not american and dont really know about any rules of "organic" labels, but this is what wikipedia says:
Organic foods are those that are produced using environmentally sound methods that do not involve modern synthetic inputs such as pesticides and chemical fertilizers, do not contain genetically modified organisms, and are not processed using irradiation, industrial solvents, or chemical food additives.
so i think it's pretty hard to not grow organic mushrooms. that is if you dont count cloning as genetical modification or something

I imagine that organic mushrooms are grown on organic substrates, so say an oyster mushroom was grown on a non-organic substrate like newspaper it could'nt be called organic.
I think RR is certified organic so he will probably give you a more detailed answer.

You were correct. For a mushroom farm to be certified organic, all substrate materials and spawn must be from certified organic sources. RR

How difficult is it for one to get certified like that RR? What process did you have to go through?

Here's the list of hoops to jump through in the State of Washington. Since they're based on the USDA standard, it should be similar throughout the U.S. RR
