Noob question about outdoor growing

Hi, this is my first post. I've been lurking around trying to learn as much as I can, and I have a really simple/stupid question that I can't seem to find the answer to.
If I'm growing on an outdoor bed (lets say Oyster mushrooms on straw), and I have a few beds that are all pretty much the exact same, can I make them fruit at different times? Or am I going to be flooded with mushrooms all at once when the conditions become correct for fruiting? I feel like I read somewhere that you can initiate fruiting by pouring water on them (though I may be misremembering), but then aren't I supposed to be watering them regularly anyways?
Also, I understand that I could 'plant' them at different times, and they would likely fruit at different times (maybe?), but I assume that would be negated in the second year?

It usually depends on the temperature and humidity, so if you have similar species then they will fruit at the same time. It doesn't matter when you plant them (although they might miss their first fruiting, they'll usually fruit at the same time every year) and yes, you could water them to replicate rain and encourage growth.

Another idea might be to cover one bed with cardboard for a week, just to drive the CO2 and warmth a bit higher (well insulate against over night temps too) this can help the mycelium flourish, then remove the cardboard, give it a good fanning, water a little and you might induce fruiting.
Just like in the wild it's one or more changes that prompt mushrooms to want to fruit.
Normally these are changes from CO2 to O2 rich environs, change in temp, change in humidity, change in available water.
Although light is important for some species i don't think alterring light has an impact, in the wild the length of days changes slowly, the night to day cycle is always there though.
