Lactarius species.

Chew a chunk and then spit it out.
Sweet, bitter, or hot?

Isn't this rather dangerous... and Not recomended?

if you have no idea what you are doing, yes, but if you can ID to Russula or Lactarius, chewing then spitting is fun even if only burning of the tongue results.
I love your avatar BTW

Chewing on a little piece of mushroom is harmless, even if it turns out to be an Amanita phalloides, as long as you don't actually swallow it. Not that I advise chewing on A phalloides, but I remember one forum member (maybe CureCat? memory fuzzy) chewing on them because they were curious what they tasted like.
It's by far the easiest way to field-identify a number of lactarius species once you a specimen identified that far though, and there are no dangerously poisonous lactarius species.

As long as you spit it out, it's no big deal. If I know I may be working with a poisonous species i will often swish some water and spit as well, although I'm not sure it really does anything more than just spitting.
It reminds me of when I pick A.muscaria at work. People are always telling me to hurry and wash my hands so I don't die... If only they knew I went home and made chicken soup out of them

I'm not sure I can see that clearly enough to judge its color, but IIRC any Lactarius whose latex does not change color and remains white/milky is edible. this is not to say they are subsequently delicious, and you should take this "with a grain of salt", but I say take a bite!

Many Lactarius with white unchanging latex are toxic.
This one is definitely toxic, per the peppery taste.
The pictures are too blurry to really tell which species it is.
OP, is the stem scrobilculate?
Zonate cap?
Does the latex stain the gills any color after sitting for awhile?
What kind of trees were nearby?
