Beef tongue tacos.

My order of tongue and tripe came in at the supermarket so I decided to take the tongue to the stove and work some magic. I boiled it first for about 2 hours (50 min or so a lb.) then I peeled the coarse white layer off and chopped up the rest for grilling. I mixed the chopped tongue with a minced mixture of green chili paste, onion, and garlic, then grilled it for a while while we fried up some of the tortillas. A friend helped me grate some pepper jack cheese and chop up some tomatoes and lettuce mix. We experimented with chunky pieces and some shredded pieces, the shredded were definitely better. The end result was fucking fantastic!

We have beef tongue and tripe all the time here it surprises me that you have to order it. That last picture is amazing!

I'm thinking Italian. Boiled tomatoes, basil, sausage, mushrooms, and oregano. Boil the tripe first then cook with previously stated ingredients on high heat in a deep pan.
And of course a nice loaf of Italian bread.

Them tacos are bomb. My mom makes them sometimes. I always indulge HARD when they're made. 
My mom doesn't boil it though.

I had beef kidneys the other night, We did them up in mushrooms and onions and all and it came out fucking sweeeet. I managed to get the piss smell out too, man that shit is RANCID!!

Lengua is such an underrated cut of meat.
Most people would just take a plain tri-tip or other store bought junk and overcook the crap out of it.

Yeah when I was slicing it up after the boil it smelled like a light pot roast, but only one of my friends was down to try it...
Right now I'm cooking tripe. I'm doing it Italian style, pics to come. My kitchen smells like Italian heaven right now.

I've had very thinly sliced beef tongue in a Basque restaurant before and remember liking it, however this was now an easy decade gone by. You've inspired me to get a lengua taco next time I'm at the truck (or shack). Been trying several cabeza (cheek meat) tacos at various Mexican eateries, but to my tooth it lacks the chewy bite that I really enjoy from a good meat taco. I've been trying to fall in love with it, but frankly, the cheek is just too soft and tender for me in the common local application: namely, the taco. Hopefully the tongue will provide the bite that I'm looking for! That thing sure is a monster you got there, and the white outer casing (natural?) is a trip.

Haha yea that's natural. I was joking with my friends that it looks like i cut off some chic's foot and cooked it, shoe on. 
The tongue is very good. I always order this tongue sandwich from this deli near my work. It's sliced beef tongue (cured and all, lunch meat style), russian dressing, and cole slaw on a long roll. I can't stop eating it.

It's just like any other type of muscle...I can remainder on a old cooking show, they roasted it and peeled off the skin of it and sliced it up....

first time I'd ever eaten tongue was this way, damn french canadians and their strange eating habits, they were expecting me to be grossed out when they told me what it was but I found it to be quite good... I'm not much on most offal but do eat some portions and I'm usually open to trying new cuts, typically liver is one I eat only small amounts of, a little tripe and gizzards but as was mentioned in LS's video, most of it's hard to come by unless you have a large ethnic community or you do your own slaughtering

I`ve always wanted to try tongue, and tripe. Never had them b4. Hear the tongue is what mexicans usually use in traditional tacos. But how do both of those taste?
Maybe you should post a recipe list for all these strange foods.

The tongue tasted like beef. A different kind of flavor, a little more gamey, but still very good. The tripe was harder to swallow. It was very chewy and the aftertaste was very grainy. My friend likened it to dog treats (milkbone)
I posted my recipe for both tripe and the tongue in the respective threads. If you need more clarification let me know.

I had menudo at a mexican place once, its basically tripe soup with chile and other delicousness. I'm really excited to get some more of it.

Beef tongue is delicious. So is beef heart, and the hearts of various other animals.
