Jars fully colonised, birthing/terrarium questions

i have eight jars of b+ mycelium fully colonized now without any contams, I'm going to leave them for another week to get a good hold on the substrate. In the mean time, i'm going to make a shotgun terrarium.
I firstly have a question related to when i birth my cakes, which i this; my mycelium has grown up over the dry verm layer on most of my jars, i know that when i birth them it i best to scrape off the dry verm layer before i "dunk and roll", however, in my case would this not be a waste? what is best to do here?
My second question is what do most people here use to strain their perlite? i've spotted what might be a slight problem as i have a pasta strainer which i thought had relatively small holes in but when i opened up my bag of perlite today and poured some in as a test i realised that it does fall through the holes quite a bit when i first put it in the strainer...no big deal?
also, as i've said i'm going to dunk and roll my cakes, i only have the course grade vermiculite, is it a good idea to roll the cakes in this? its all i can get. Actually a good tip that i discovered myself is that if you can only get course grade verm like me, when you are making your substrate filter it through a pasta strainer and use as much of the smaller verm pieces that fall through as possible. However having done this, i now only have chunky bits of verm left for my "roll".
a fourth question; i've studied various documents which say to mist cakes and exchange air in the terrarium twice a day, is it better to do it more than this? or maybe as long as the humidity is as close to 100% as possible it doesn't matter.

1. Just rinse off the cake under the faucet. Whatever verm that needs to come off, will.
2. Use a regular strainer, and yes it does slip through sometimes. Its whatever.
3. Its verm, it will do the trick. Just try getting other stuff for future grows.
4. You can mist and fan all you want. They will love it

I like to let cakes consolidate for a week, then I remove the lid and place the whole jar in the fruiting chamber.I also keep the verm layer sprayed down a little to just keep it moist, but dont use too much. I basically just dont let the cake dry out. I then wait a week or so, until I see tiny pins. Then I birth the cake, and dunk. I guess you could also role in verm, but I dont, Because I feel it will just spend energy colonizing the verm role, and it should be using that energy to produce a larger mushroom. Most folks refer to this as fruiting in vetro.
