I don't know what the fuck a dubtub is bro but if you're planning on using coir/verm then I'd highly recommend Damion's 50/50 Tek, even though you've probably already read it :P But dude coir kicks so much ass, I had alot of success with it my first try. Here's a personal bit of advice though that may not necessarily be universally true but it worked well for me: Where the tek tells you to mix that shit in with the coir, try layering it instead Like some coir/verm, then spawn on top, then coir/verm, then spawn on top, then some coir verm.
Shit grows fast.

If you make it right, you can go away for a few days at a time. I have left a dubtub sit for 3 days.

I'd make a mono tub. They're pretty much "set & forget" once in fruiting conditions.
Check out Damion5050's Elementary Coir tek. If you have Fine verm, use 3 quarts instead of 2.
There's tons of great information for bulk grows in the Q&A AMU Thread in my signature.
I wouldn't recommend layering. I've heard that full on mixing is better/quicker. I've never tried layering though, seems like a bit more work than it's worth.

getting a setup fully automated takes some experience and tinkering. no one system is proven pro-neglect because weather patterns vary from region to region and even house to house or cabinet to closet.
I'm definitely still learning, but I can say I would not feel comfortable setting up anything knowing I was gonna be gone that much of the week.
on your "almost done" jars, don't rush it; they can go into consolidation mode for weeks after 100% and still be viable. get your setup/plans tuned in as best as possible before spawning

I wouldn't recommend letting them over-colonize too much though. They're a PITA to bust up in the jar then...

Depends on how many jars you're going to. I'd recommend 1 colonized jar to 10 jars, but you can do as little jars as you want, just depends on how much room you've left. I only fill my G2G jars half way for G2G.
Also, I wouldn't recommend using anything to "spoon" out your spawn, because that's just another vehicle for contams to enter your uncolonized grains. I do it like RR does his. Just pour the colonized spawn into the fresh grain...
