Hiking the AT is also a goal of mine. I would say its 5-10 years off though. I'd love to do a portion of it this summer.

I'm thinking that i want to do this thru hike with my main source (or only source) of sustenance to be cannabis seeds.
can i get away with eating only cannabis seeds and drinking water days at a time?
i know i'll have the occasional cheeseburger and beer when i get into small towns along the way.

Why on earth would you do that? I'd definitely pick a food that contains little to no water at all, so it doesn't weigh you down and you can add the water where you find it. TA's couscous sounds like a perfect plan, but I have good experiences with brown rice and good old fashioned flour as well (the longer cooking time being the drawback; granted).
Supplement with beef jerky and things you find on the trail. Nettles are usually an abundant and healthy vegetable, as are some allium species. Berries and mushrooms as well if you know what you're doing. Fish if you have the time and opportunity, and hunt if you're into it.

actually i don't think it will be...i'd have to eat almost a pound a day. to get 2,000 calories.

On second thought, I'd consider supplementing those seeds with a source of carbohydrates. You will survive on just hemp seeds, but I suspect that you'll feel better if you add some extra carbs into the mix.

I have no idea, but take into account that you'll be burning a lot of energy, depending on the distance you walk each day, the weight of your pack and any other activities (setting up camp, collecting firewood, etc.) It also depends on how much fat you want/can afford to lose, and how much hunger you're willing to experience. Again, for a couple of days, you could live on less, but you'll be amazed at how hungry a man can get in just 3 days, even packing a reasonable amount of food. Using this calculator and a person of 185cm/75kg (slim/normal Western male of average-ish height), assuming that he'll be doing 12 hours of resting, 3 hrs very light excercise, 5 hrs light, 3 moderate and 1 heavy (rough estimate of some light hiking in not too mountainous or hilly area), you end up with a daily energy requirement of about 4000 cal. Note how far this is from your 2kcal estimate. The test person I entered in the calculator needs about 1900cal/day just for the upkeep of his body.
I'd strongly recommend not complicating things too much for your first (?) thru-hike. Take no risk when it comes to water, shelter and food. Things can get complicated even if you're well-prepared, and at times like those, you'll be pulling the hairs off your head for making awkward decisions in preparation.
Don't underestimate the effort you're going to put into just staying warm at night, properly hydrated during the day and well-fed in the evening. But heck, maybe you know all this. Just be prepared, that's all I'm saying.

i want to stay away from foods that require cooking.
i plan on using a bivy sack....and don't see myself making fire for anything other than social reasons.
i don't really want to take a stove either. the most preparation for a meal on the trail, that i'd like to involve myself in, would be MREs or something like a protein shake.
eating a mixture of different types of seeds appeals to me.

Nothing wrong with old-fashioned nuts and berries. Make any mix of peanuts, walnuts, almonds, hazelnuts, etc. and raisins, dried cranberries, apricots, mango, etc.
The drawback is that nuts tend to be heavy, that's why foods that can be reconstituted or cooked on the trail tend to be popular; as long as there's sufficient water to be found along the trail you don't have to carry the water in the food around. So that's why hikers carry around flour, rice and couscous.
Backpack weight is your biggest enemy.

Protein is always underrated when hiking long distances. When I had a tuna packet or a protein bar at the beginning of the days hike it made my hike so much better. I think you should do some or one week long hike(s) then you will get a feel for what you are carrying. When you do the appalachian trail you are going to have to carry a week or more food worth at a time, which means that it might have to be freeze dried, really light weight, and non perishable. I saw one guy on the colorado trail who only ate fresh foods and never cooked. Personally a hot meal on a cold night is exactly what I needed and wanted after 20+ miles per day... Go on some longer hikes and see what works best for you. And I agree, backpack weight is your biggest enemy and nuts aren't cheap.

i found a guy on youtube that started the AT yesterday in Georgia. And hopes to make it to Maine in 189 days. looks like he might be uploading videos as he goes along the trail. i hope he turns out to be an interesting character.

Thru-Hiking you need to consume 2-3x the normal calories you usually do. That means you need to eat ~4,000-5,000 calories per DAY to not lose all your weight on the trail. You are probably not going to want to survive solely on hemp seeds - although I am SURE it could be done. You probably won't get enough calories. Supplement and snack with hemp seed sure. Toss it in your trail mix. But you need other calorie rich foods or you will burn out fast.
You also want to consume at least a gallon of water a day, bare minimum. Finding water of the AT is ~very~ easy though. You shouldn't ever need to carry more than a half day/day's supply. There are little stores and stops right off the trail all along the way, natural tapped springs... water is abundant on the AT.

Right now I'm having a hard time imagining what it'll be like carrying all that weight with somewhere to around 5 days of food at a time and 1 gallon of water at a time.
