Shiitake and yellow onion soup (creamy)

This was one of my recipes from culinary school that I came up with and was graded on. Culinary school really opened my eyes to cooking with mushrooms, and this is a mushroom website, so here we go.
This soup is fairly simple and I'm not trying to reinvent the wheel. You can follow the recipe to a T or play around with it, you can't really screw this up.
******** I'm going to type this out word for word how I wrote in many years ago, there are some French terms that we were required to learn, I will try to define them in gray if unclear ********
serves 4
6 large yellow onions, emincer thin slice 250 grams shiitake mushrooms 1 large russet potato 650 ml water 650 ml chicken stock 250 ml heavy cream salt and pepper oil for saute (~200 ml)
4 tbsp butter 1 tbsp walnut oil, chilled few drops of lemon juice salt
Procedure: Bring stock and water to a boil, take off heat. Sweat onions in some oil until very soft. Increase heat and caramelize slightly. Reserve. Hacher rough chop the mushrooms, season, and saute in oil over high heat until browned nicely. Reserve. Cut potato into small even pieces. Place onions, mushrooms, and potato into stock/water and simmer for at least 30 minutes. Blend mixture carefully and pass through a course chinois metal strainer. Place back into a pot and bring up to heat. Add cream to consistency and taste. You can reduce cream by 1/2 beforehand if you want a creamier soup. Season with salt and pepper to taste.
walnut beurre noisette brown butter: While soup is simmering, make the beurre noisette. Place cold butter into saute pan over high heat. When butter reaches noisette stage remove from heat and add chilled walnut oil to stop the cooking. Add lemon juice and a pinch of salt. Garnish soup with a drizzle of beurre noisette, small sauteed shiitake, and/or chives.

I have never seen a recipe on here that I wanted to try to so much.

Sounds amazing! Incidentally, I'll have a flush of shiitake ready to pick in a few days, I just might try this! Do you think that some dry boletes would work good in this, or would they ruin the point of shiitake soup? Thanks for posting!

I don't see why boletes wouldn't work. The shiitake have that very strong distinctive flavor, so they might overpower your boletes though. You can give it a shot and let us know how it turned out.

I think the boletes might be a great nutty/creamy accompaniment to the fishiness of the shi-take.
That's a great recipe; it's very similar to the mushroom soup I make during autumn when there are fresh, wild mushrooms at hand. I normally use boletes, so while the concept is similar, the flavor will be quite different if shi-take are used.

Is that really 200ml (almost 7oz)? Seems like a lot of oil to sauté this quantity of onions and mushrooms.

Yeah it's a lot of oil, but 6 large onions and that many mushrooms will need quite a bit. You can get away with less, it was just an estimate for a starting point.

Oh yeah, it'll work, but I would use less than half of that quantity. Just personal taste though.

everyone loved it, though I did take a few of the potato chunks and added them to the served soup, to add substance to it. Great job, hope you got an A on it.
