From what i've read Pepper it's not that uncommon with Hericium erinaceus to fruit like that, but i don't have any hands on experience with them yet. It was mentioned in the GGMM i know.

It's very common for hericium to do that. I just went ahead and made some slits in a bag that wasn't quite fully colonized because the entire top had a ton of fruit and the sides were pinning.
Hericium will fruit off agar, grain, anything even before fully colonized sometimes. It's normal.

I have LM grain cultures that are exploding with primordia before they are fully colonized. I got mine from Sporeworks. Their site claims that it spontaneously fruited on agar. Guess its normal.

So a couple slits in the sides of the bag. Did you open the top and mist daily like a Reishi bag, than close with clothespin. Thanks again everyone.

No I usually just make slits on the side of the bag. Though this time I'm experimenting with making some slits in the space on top since there are a bunch of in vitro puff balls on the top. With just a few slits you can get big fruits growing right out of the side of the bag:

Your bag should be slit now. I recommended one slit on each side.
It is best to slit it once the bag is colonized by thin mycelium. Not when it gets thick.
I fruit my Hericium on a shelf in my house with no extra humidity. No shit! There is also no need to mist if it's in a nice cool place. i find it gets blotch easily if you do.

Not much in my experience. They don't want to get soggy. If my humidifier is running too often and it rains for instance they get a bit too much moisture. I find the real art with hericium is knowing when to make the slits. You wait too long and the whole top will be full of leggy puffs. But if you go too early there's a chance mold will get going in the slits before the fruiting can really get going.
But when it comes down to it timing is really the key to any grow.

Yeah I waited to long, they have mushrooms growing on the top of the block. I guess that's better than the mean green...They have changed from a white color to a pinkish hue. Is that what they do? Is the pink color normal?

I'm having the same "problem" with a strain I picked up from a local shop. It is pinning on agar, rye and sawdust before colonization. It's impossible for me to get any kind of work flow going when it decide to spontaneously fruit so it's getting shelved.
